It’s been a while since I’ve posted a recipe here, but after buying Pete Evan’s new book, Low Carb Healthy Fat recently, I was excited to try out some of his!

If you’ve never heard of o’l Paleo Pete you can check out his websites Pete Evans and The Paleo Way. There’s been a lot of controversy in the Australian media surrounding him lately due to his promotion of a Paleo way of life, and I’m seriously dumbfounded as to how anyone could possibly ignore the countless health benefits from eating a diet full of organically grown fresh vegetables, grass-fed meat and wild-caught seafood?! Surely all the criticism has nothing to do with the $$$ agendas of particular big industries, right?? (sarcastic voice)

Anyway, whenever I buy a new recipe book I immediately flip straight to the dessert section, and this time was no different.

Keto Chocolate Coconut Bites.


Because I’m never one to follow recipes, often because I’m missing ingredients, (and no offence Pete, but if a recipe calls for only three tablespoons of coconut cream there’s no way I’m going to open up a whole new can if I don’t plan on making a Thai green curry with the rest of it for dinner that night), I simplified and tweaked this recipe to suit the ingredients that I already had in my pantry and, lo and behold, they still turned out 👌!

Here’s my version:

Paleo Chocolate Coconut Clusters –


  1. 150g of organic cocoa butter

  2. 2 Tablespoons of organic coconut oil

  3. 4 Tablespoons of raw cacao powder

  4. 4 Tablespoons of granulated stevia (replace with coconut sugar if not following a Paleo diet)

  5. Dash of vanilla extract

  6. 100g of organic coconut flakes


  1. Dump everything except for the coconut flakes into a glass or metal bowl over a pot of simmering water like a double-boiler. Stir until it’s all melted together.

  2. Place in fridge for 5-10 minutes until it starts to thicken a little, but not so much that it solidifies.

  3. Stir in coconut flakes and scoop tablespoons out onto a sheet of baking paper, and place in the fridge for half-an-hour until firm.

Then eat!

They seriously taste so naughty but they’re really not. Full of healthy fats and sugar-free, they won’t spike your blood sugar levels, plus they’re also gluten-free and vegan!
